Beef with Stout

Ingredients

1½ lbs. Stewing Beef
2 Tablespoons of oil
2 Large Onions peeled and sliced
1 Teaspoons of plain flour
275ml can of Stout
7 fl oz. Beef Stock
2 Tablespoons of Tomato Puree
4 oz stoned prunes
8 oz. carrots peeled and sliced
Salt & Pepper to taste

Method

1 Cut the meat into 1½” cubes (trim off fat). Heat the cooking oil in a flameproof casserole. Add the meat and fry until well browned on all sides. Remove with a spoon.

Add the onions to the remaining oil in the pan and fry gently until lightly browned. Stir in the flour and cook for about 1 minute. Add the stout, stock, tomato puree, prunes and carrots. Bring to the boil and season with salt & pepper.

3 Replace the meat cover and cook in the oven at 170°C (Gas Mark 3) for about 1½ - 2 hours (until tender)

 
Banana Tea Bread

Ingredients

8 oz self raisin flour
½ Teaspoon of bicarbonate of Soda pinch of salt
3oz Butter
6oz caster sugar
2 Eggs (beaten)
1 lb. Bananas
4 oz Walnuts (chopped)

Method

1 Heat the oven to 180°C (Gas Mark 4) and grease & line a 2 lb. loaf tin.

2 Mix together the flour and bicarbonate of Soda and salt

Cream the butter and sugar until pale and fluffy. Add the beaten eggs a little at a time alternatively with the flour

Stir in the remaining flour, bananas and walnuts. Place in the baking tin. Bake for about 1¼ hours.

Turn out and cool on a wire rack.
